Pineapple 3C Teriyaki Shrimp and Veggie Skewers

Nothing says summer like grilling out and enjoying the extra sunshine. A refreshing poolside IPA, paired with glazed shrimp skewers make the perfect meal for a date, night with friends, or a fun dish that gets the whole family involved.

Ingredients

·         1 Pineapple (chopped into chunks + core rough chopped)

·         1 Red Bell Pepper (chopped into chunks)

·         2 Zucchini (chopped into chunks)

·         2lb of peeled & deveined 16-20 shrimp

·         1 small piece of ginger grated

·         ¾ cup Pineapple 3C IPA

·         ¼ cup Soy Sauce

·         3 ½ tbsp Brown Sugar

·         2 tbsp cold water

·         1 tbsp of corn starch

·         Skewers

 
 

Corn Starch Slurry

1.       Mix 2 tablespoons of cold water with 1 tablespoon of corn starch into a slurry

Pineapple 3C IPA Teriyaki Glaze

1.       Place 6 large pineapple chunks, chopped core, ginger, and a cup of water into pot and boil for 15 minutes

2.       Remove from heat and blend with a hand blender until smooth

3.       Return to pot and bring to a simmer

4.       Add 3 ½ tbsp brown sugar, ¼ cup soy sauce, and ¾ cup of Pineapple 3C IPA

5.       Simmer for 5 minutes

6.       Add cornstarch slurry

7.       Stir to thicken and remove from heat to cool

Prepare and Grill Skewers

1.       Heat grill

2.       Make skewers with a few shrimp, zucchini, red bell pepper and pineapple chunks

3.       Lightly brush or spray with olive oil/cooking oil

4.       Place skewers on grill, generously apply Pineapple 3C IPA Teriyaki to both sides while cooking

5.       Cook about 2-3 minutes per side

6.       Remove skewers from grill and apply more of the Pineapple 3C IPA Teriyaki

Top with red pepper flakes and serve over rice or your favorite vegetable rice substitute and enjoy a refreshing Pineapple 3C IPA!
